A couple of people asked what a candy roaster was. A candy roaster is in the squash family from what I can tell. The North Carolina version is a light orange/peach color and can weigh up to 60 lbs. You can cook them just like a pumpkin or a squash. Split them open, scrape the seeds out of them and roast them in the oven. We puree the cooked inside and use it to make a casserole, souffle or pie. They have a sweeter taste than the other squash, or at least to me they do.
I found this website with a couple of recipes for the candy roaster. I have baked the first recipe and it was very yummy! I am looking forward to baking more with the candy roaster. My kids love it and think that it taste just like pumpkin pie when I make a souffle out of it.
