What Would You Like To Know?

I have been blogging a little over 2 years.  Just recently, well at the beginning of the year, I have gotten a little more serious about blogging.  I have been blessed and encouraged by the amount of “followers” that have been reading my blog.  I also know of several who subscribe to the rss feeder.  For my readers, I am really grateful that you take a few minutes out of your day to read what I have written.  While the numbers really do not mean all that much to me, it does encourage me to keep writing what I have on my heart.  So thank you to everyone who does take time out of your day to read my daily ramblings.

I would like to give everyone a chance to ask me anything that you want.  

Is there something that you are just curious about?

Do you have a paritcular subject you would like for me to write about more?

Ask me anything and I will do my best to answer.

I would also like to know why you enjoy reading my blog!

Family Recipes – Pumpkin Cake

I thought it would be appropriate to share this recipe since it is Autumn and the season for pumpkins.  It is a very yummy recipe and I can’t wait to make it again soon.  I hope you enjoy it as much as I do!

Pumpkin Cake

2 cups pumpkin                              2 cups all-purpose flour
1/2 tsp salt                                     2 tsp cinnamon
2 tsp baking soda
2 cups sugar                                   4 eggs
1 cup crisco shortening

Preheat oven to 350 degrees.  Grease and flour 9×13 pan or 2 round pans.  Combine the pumpkin, flour, salt, baking soda and cinnamon in a bowl and mix well.  Then add the sugar, eggs and crisco shortening.  Mix until it is well blended.  Pour into pans and bake for 35 minutes or until toothpick comes out of middle clean.

Frosting:

1 stick of butter (softened)
6 oz. of cream cheese (softened)
1 box of powered sugar
1 tsp vanilla extract
1 cup pecans, finely chopped

Cream butter and cream cheese together.  Then add the powdered sugar, vanilla extract and chopped pecans.  Mix well.  Spread on a cooled cake.

Enjoy!!

My wonderful homeschooling blogging friend Joelle from Homeschooling for His Glory “tagged” me. She has seven questions that she would like for me to answer. So here it goes!
1. What is the one thing you find the most difficult about homeschooling? For me, it is making sure I get all of the activities and projects completed that go along with a lesson.
2. What is the one thing in your children (or one of your children) that you have the hardest time to deal with or manage? The attitude of “I can’t do this! It is too hard! I don’t understand it!”
3. What is the most amazing place you have ever visited? The most amazing places I have ever visited in the Great Smoky Mountains and the Blue Ridge Parkway. It is amazing how God created such beautiful place. The views along these routes are spectacular.
4. What do you like to do when you are alone? I have a passion for reading. You will always find that I have at least one, if not more, books with me.
5. How many days of the week (on average) does your scheduling gets followed? I would say at least 3 days of the week I am lucky to get everything finished that I have scheduled.
6. Are you the kind that lets the folded laundry sit awhile before putting away, or it gets put away right away? I do my best to put it away as soon as it is folded. This does not always work, but I do try!
7. Do you plan the Christmas season out? I used to plan the Christmas season out, however this year, we have decided to just go with the flow. I am going to allow God to work in my heart this season and no one else. We celebrate because of Jesus, not man and I am going to do my best to get my family back to the real reason.
